Here’s a new spin on guacamole you can try out this Labor Day weekend, the upcoming NFL football season, or at your next family party.

Bacon and fig, an amazing marriage of flavors…

Bacon and fig in a guacamole… party in your mouth.

Ingredients:

– 12 figs, diced into 1/8th section pieces

– 4 avocados

– 3 pieces pastured bacon, chopped

– 1/2 red onion, chopped

– 1/2 bunch cilantro, chopped (about 1 cup)

– 1/2 lime, squeezed

– 1/2 tablespoon garlic powder

– sea salt and pepper to taste

Directions:

Start by cooking your bacon on medium heat in a pan.  While the bacon is cooking, prepare all your other ingredients.  When bacon is done cooking, let it cool to room temperature and chop into bacon bit pieces.  Add all ingredients to a bowl and mix (you can even add the bacon grease if you want to live dangerously!).  Serve with your favorite style chip (I dig sweet potato chips) and it will be sure to impress your friends and family at your next get together!

Total Cost Breakdown:

4 avocados – $1 each at farmers market, $4 total.

3 pieces bacon – about $1.50

1 basket of figs – On sale at whole foods for $2.99 (used about 3/4 basket, or we’ll call it about $2.50 this dish)

1 bunch cilantro – $2 (used 1/2, so $1)

1/2 lime – $0.25

1/2 red onion – $0.50

**I don’t count the minimal use of spices used.

Total Cost Ingredients:  about $9.75, or less than $10 and you have an amazing appetizer platter for your next family or friend gathering.  I made this for a barbecue with 12 people and there was plenty to go around.  All ingredients are organic.  Bacon is pastured and nitrate-free.
