Chocolate lovers…time to get happy.  I give you a super clean and guilt-free party for the taste buds:

Homemade, real food-ingredient triple chocolate chunk ice cream. 

If you missed it on Instagram, I started creating a bunch of new real food ice creams for one of my up coming programs called DialIN FAM – a comprehensive program design for the family which will cover food & lifestyle, food for the kiddos (and school lunch ideas – ciao lunchables!), meal prep, home cooked real food meals in 10-15 minutes or less, plus much more.

This triple chocolate chunk along with the pistachio ice cream and apple cinnamon ice cream that we previewed will be in the program with many more ice cream flavors.

This will be the third and last ice cream we’ll sneak peek, and I saved the best for last as I thought out of all the ice creams done, this was top 2 or 3 (pistachio was another one of my favs). 

This triple choco chunk has paleo & vegan-friendly real food ingredients, is gluten-free, dairy-free and chemical junk free.  Let’s dive in..

Triple Chocolate Chunk Ice Cream Recipe

For this triple chocolate chunk ice cream I used three chocolate sources:  raw cacao powder, cacao chips, and a homemade gluten-free brownie recipe.

Ingredients:

1 can organic coconut milk (13.5 oz)

4 tablespoon raw cacao powder

2 tablespoon maple butter (see kitchen notes)

1/3 cup cacao chips (you could also use cacao nibs here instead of cacao chips)

1 big chocolate brownie (about a cup of chunks..see kitchen notes)

Kitchen notes:

1. Sweetening options:  I used maple butter for this, but  you can try a no-sugar added option like 100% stevia, a lower glycemic sugar like coconut nectar, or raw sugar option like coconut sugar.  After you blend your ingredients (see directions #2 below) you can taste it if the sweet is good for your palate before beginning the ice cream (just remember, you’re adding cacao chips & brownie too).    

2.  Brownie:  I used an organic gluten-free brownie mix from the store and simply followed directions on the box.. but you can really use any of your favorite brownie recipes you want.  My real food[ie] friend Alexis of Lexi’s Clean Kitchen has a tasty paleo brownie recipe up on her blog you could use.  You could try a raw version and do a raw brownie ball by my other real food[ie] friend McKel at Nutrition Stripped.  Or just do what I did and pick up a version at the store. The point is, you just need brownie for chunks.. so choose whichever one you want that fits your food lifestyle!

3.  Ice cream maker:  When making ice cream, you need one piece of equipment to make it “set it and forget it” easy to do:  an ice cream maker.  If you don’t have an ice cream maker, here are 6 other ways you can make ice cream that I found in Saveur magazine.  I have an ice cream maker so the directions for this recipe are written for it, but you should be able to adapt the steps below if you use, for example, one of the methods in the Saveur magazine link.

Directions:

1.  Make your brownies so they’re done and cooled.

2. Add your coconut milk, cacao powder and maple butter to a blender and mix.

3. Start your ice cream maker and pour your mixture in.  My ice cream maker has a small opening at the top, so what I did from there was added my cacao chips and simply just took a nice handful of brownie and broke it up into chunks and let it incorporate in as the ice cream was mixing.  

4. Let your ice cream mix for 20-25 minutes and fineto!

This is reward day type food for me, so enjoy in 80/20 moderation while eating according to your metabolic type for optimal health, energy, vitality and athletic performance.
